Step 1

Simply blend the biscuits and pistachios together into a fine crumb. Then add the remaining ingredients and blend until smooth.

Step 2

– Roll into evenly sized balls and place onto a tray lined with baking paper and set in the freezer while you melt the chocolate.

Step 3

Remove the tray from the freezer and coat the cheesecake bites into the chocolate. Then melt the vegan white chocolate and drizzle onto of the set cheesecake truffles and top with pistachio crumbs.
