Expert Baking Tips for this tiramisu cake lady finger recipe

Although the recipe for this tiramisu fingers recipe is super simple, here are just a few expert tips I'd recommend:

        • Make sure your milk is at room temperature before adding it to the dry ingredients to prevent lumps from forming.
        • I used caster sugar for the sponge which is just very refined sugar. If you cant get a hold of any, then another refined sugar will work well here.
        • Pipe only 4-5 fingers on one baking tray to prevent the fingers from sticking to each other as they bake.

        • Caster sugar - Caster sugar is just very refined sugar. If you cant get a hold of any, then another refined sugar will work well here.
        • Gluten-free flour - If you didn't want to make this gluten-free, then substitute this for normal plain flour.
        • Veg oil - sunflower oil or olive oil will work here.
        • Cornflour - This will help provide stability to the fingers. If however, you are not making this gluten-free you will still need this.
        • Xanthan gum - acts as a stabilizer and prevents the sponge from becoming too crumbly.
        • Plant-based milk -  I used MIGHTY Barista milk for this recipe. It’s made from yellow split peas and British oats (with no concentrate) which require considerably fewer resources (land and water) than cow’s milk or nut milk. Making it more sustainable and great for the environment. Find out more here.
