Although this recipe for these vegan chocolate s'mores cookies is super easy, here are just a few expert tips i'd recommend:
- Make sure your vegan butter is properly creamed into the sugar before adding the plant-based milk
- Evenly space the cookies out on the baking sheet to prevent them from sticking to each other as they spread and bake in the oven - I would place 4 on a baking tray.
- If you find your cookies are not spreading as much as you'd like them to, gentry press the centre of the cookie down with the back of a spoon -> 8-10 mins into baking.
- To get a perfect round cookie shape, grab yourself a large round cookie cutter and nudge the cookie into shape.

Ingredients for s'mores cookies

Here's everything I used to make these s'mores cookies gluten free
- Gluten Free Plain Flour – this is paired with xanthan gum to give more stability to the cookies to prevent it from crumbling. However, if you’d prefer not to make these gluten free simply substitute the gluten free flour for normal plain flour. There’s also no need to add xanthan gum as the gluten in the normal flour will prevent the brownies from crumbling.
- Dairy Free Butter – This can either be dairy free spread or vegan block butter at room temperature to be creamed into the sugars.
- Plant based milk – I used oat milk but almond, soya, or any other plant based milk will work well too.
- Caster sugar – I like to use caster sugar in my cookies which is just a very refined sugar. So if you can’t find caster sugar I’d recommend using very refined granulated sugar.
Non vegan alternative.
If you don't want to make this recipe for s'mores cookies vegan simply substitute the dairy free butter for regular block butter or margarine, the plant based milk for normal whole or skimmed milk and the vegan chocolate for normal dark/milk chocolate.

Vegan s'mores cookie recipe - Step by step instructions
The s’mores edible cookie dough
- Begin by creaming together your butter, oil and sugar until smooth. Then mix in your milk - it might look as though it curdled but thats normal.
- Add the flour and Xanthan Gum and mix in gently with a whisk. Finally fold in your chopped chocolate and marshmallows leaving ¼ for the top of the cookies.

- Using an ice cream scoop, scoop the dough into your baking tray, making sure they are spread out - I like to fit only 4 on a baking tray.

- Bake for 10 mins and they should be slightly firm on the outside and soft in the centre and the marshmallows slightly toasted.
- Allow the cookies to cool on the tray for 5 mins so they can further bake. Finally enjoy with a glass of plant based milk, tea or whatever you fancy!

Does smores have gelatin ?
Or more specifically, “do vegan marshmallows have gelatin ?” Yes, however, i have managed to find plant based marshmallows that taste incredible and melt just like regular marshmallows! Not sponsored but this is the brand I use.
Can I use this recipe to make small batch s'mores cookies ?
Yes, just simply divide the recipe in ½ and it'll make approx 8-10 cookies

Storing and freezing
Can you freeze vegan cookies ?
Yes, however, I would recommend freezing them before baked as cookie dough balls inn an airtight container, and they’ll last up to 6 months!

- 300 g Gluten Free flour

- Preheat your oven to 180°c and line your baking tray with grease proof/parchment paper. Set aside while you make the cookie dough.
