Ingredients for vegan cinnamon bread dough
- Cinnamon and sugar mixture (for the filling)
- Vegan caramel sauce (for drizzling)
- Vegan butter
- Plain flour/bread flour is also suitable for this recipe
- Plant based milk
- Apple puree this is our egg substitute

Instructions

Begin by making the buttermilk by mixing together the plant based milk and vinegar and set aside for at least 5 minutes. Warm the milk mixture in the microwave for 20 seconds then sprinkle ½ teaspoon of sugar and all the yeast. Leave it to rest for at least 5 minutes. In a clean bowl or bowl of a stand mixer whisk together the remaining sugar, puree, flour and butter.

Knead the dough for 10 minutes with a dough attachment, or knead the dough by hand on a floured surface for 10-20 minutes or until the dough is thin enough to see light through without it breaking [when you pull a piece of the dough - not the whole dough ;)]

Then place the dough in an oiled bowl and cover with clingfilm/plastic wrap or tea towel. Leave it to proof in a warm place for at least an hour. As the dough proofs make the filling by combining the brown sugar, butter and cinnamon until smooth.

- Roll the proofed dough onto a floured surface or on a sheet of plastic wrap/ baking paper to prevent the dough sticking to the surface.

Once the dough has been rolled into a large rectangle and around 3cm thick, spread the cinnamon filling across the entire surface.

Then place the vegan caramel into a piping bag or drizzle it on to the dough with a spoon.

Slice the dough into even squares.

Layer them onto of each other.

Then place it into the loaf tin and bake for an hour.

Once baked allow it to cool before peeling the bread slices apart and enjoying with a warm cup of your favourite drink!
Substitutions
- Vegan Butter: If you don't have vegan butter, coconut oil can be a good alternative for layering.
- Vegan Caramel Sauce: No caramel? Drizzle the dough with vegan chocolate sauce for a chocolate twist.
Variations
Babka style vegan cinnamon bread - Instead of layering the bread squares on top of each other and placing it in the loaf tin on its side for this recipe. Layer the squares folded into each other, to create a twisted cross section.
