The eggless gluten free chocolate cake recipe
This quick gluten free chocolate cake recipe requires approx. 15 mins of your time. Simply begin by combining the apple cider vinegar and plant based milk to make a vegan ‘buttermilk’.
And set aside as you whisk together the gluten free flour, caster sugar, xanthan gum, baking powder, baking soda, cocoa powder, until fully combined.

Then pour in the plant based buttermilk and applesauce. Mix until just combined then go in and pour your hot brewed coffee. - You won't be able to taste a coffee flavor at all in this cake, it just helps to enhance the chocolate flavor - game changer, don’t miss this step!

Whisk that until fully combined and transfer to your prepared bundt tin and bake that for 40-50 mins. This vegan chocolate bundt cake should be springy to the touch and a couple of cake crumbs should be left on a toothpick once inserted as the sponge is super moist 🙂

Secret to how to make a gluten free chocolate cake light and fluffy

The key ingredient I've found is a apple sauce - this is an excellent substitute for eggs as it makes your sponge light and helps to bind the ingredients together.
The second combination is ensuring you have both bicarbonate of soda and apple cider vinegar in your recipe as this is what allows the cake to raise and create that fluffy airy texture.

The best vegan chocolate bundt cake
Equipment
- Bundt tin
- Bowl
- Whisk
Ingredients
- 280 g Caster sugar
- 1 teaspoon Xanthan Gum
- 2 teaspoon Baking Powder
- 1 ½ teaspoon Bicarbonate of soda
- 210 g Gluten Free flour
- 50 g Cocoa powder
- 130 g Apple sauce
- 150 ml Plant based milk
- 78 g Veg oil
- 1 tablespoon Apple cider Vinegar
- ¾ cup Brewed coffee
Ganache
- 80 g Vegan chocolate
- 1 tablespoon Vegan butter
Instructions
- Preheat the oven to 180°c and prepare your bundt tin cake. (Refer to notes)
- Combine the milk and apple cider vinegar in a glass/bowl and leave aside while you make the batter.150 ml Plant based milk, 1 tablespoon Apple cider Vinegar
- Mix together the dry ingredients into a large bowl until fully combined.280 g Caster sugar, 1 teaspoon Xanthan Gum, 2 teaspoon Baking Powder, 1 ½ teaspoon Bicarbonate of soda, 210 g Gluten Free flour, 50 g Cocoa powder
- Pour in the wet ingredients except the coffee and mix into the dry ingredients until combined.130 g Apple sauce, 150 ml Plant based milk, 78 g Veg oil, 1 tablespoon Apple cider Vinegar
- Pour in the coffee, whisk. And becareful not to over mix.¾ cup Brewed coffee
- Transfer to your prepared bundt tin and bake for 45-60 mins. The sponge should be springy to the touch.
- As the cake cools, make the vegan ganache by melting together the vegan chocolate and butter. It should create a slightly thick glossy sauce.80 g Vegan chocolate, 1 tablespoon Vegan butter
- Once the cake has cooled pour over the ganache and let it drip down the cake.
- Slice and enjoy!

You can never go wrong with chocolate and I love that this is vegan. We don't have caster sugar here but I believe I can substitute with baker's sugar?
