These raspberry cheesecake truffles are perfect little tiny treats to make as a snack or something extra to add to your party table that's really quick and easy to whip up.

The ingredients for the vegan cheesecake bites

What’s amazing about these easy no bake truffles is that they only require 5 ingredients! Raspberry biscuits, vegan cream cheese, vegan chocolate, pistachios.
These are the extract ingredients I used and some non-vegan alternatives:
Biscuits - I used the Nairn's Gluten Free Biscuit Breaks Chunky Oats, Blueberry & Raspberry. These are vegan, gluten free and soy free! If you can’t get a hold of these other breakfast raisin biscuits would work well here too.

Vegan cream cheese - Violife and Vegan Philadelphia Cream cheese are my favourite vegan cream cheese and they're both very smooth and creamy. Not sure of any other vegan cream cheese brands if you have another favorite, let me know in the comments below 🙂
Vegan Chocolate - If you don’t want to make these gluten free truffles vegan then you can easily opt for normal chocolate preferably milk chocolate to add more sweetness.
Pop it all into a blender/food processor, roll into evenly sized balls, dip in chocolate, set it in the fridge and there you have it super easy and quick truffles in minutes and they taste so good!

Not to mention, these little guys look pretty fancy, dipped and drizzled in chocolate and topped with pistachio crumbs. They look pretty dainty and yet they are a lot easier to make then what people would assume. And therefore, more go to confection to make for a little tea party or dessert table, because unlike many other desserts this one is far easier to whip up, despite how good they look.
These raw vegan truffles are paleo, soy free and gluten free!

Vegan Truffles Recipe

Raspberry and Pistachio Vegan Cheesecake Bites
Equipment
- Blender/Food processor
- Tray
Ingredients
- 200 g Vegan cream cheese
- 15 g Icing sugar
- 10 g Pistachio (approx handful)
- 100 g Raspberry Biscuits
- 60 g Vegan chocolate
Optional
- Vegan white chocolate
- Pistachios
Instructions
- Simply blend the biscuits and pistachios together into a fine crumb.100 g Raspberry Biscuits, 10 g Pistachio
- Then add the remaining ingredients and blend until smooth.200 g Vegan cream cheese, 15 g Icing sugar
- Roll into evenly sized balls and place onto a tray lined with baking paper and set in the freezer while you melt the chocolate.
- Remove the tray from the freezer and coat the cheesecake bites into the chocolate.60 g Vegan chocolate
- Then melt the vegan white chocolate and drizzle onto of the set cheesecake truffles and top with pistachio crumbs.Vegan white chocolate, Pistachios
- Voila. Enjoy!
