        The Best Tiger-nut Flour Recipes up Second Cookie Dough Bars

        Looking for some delicious tiger-nut flour recipes? I have compiled 4 of my ultimate foolproof desserts for you to try.

        Up first we have these layer cookie bars. The bars are composed of a cookie dough base topped with a smooth vegan chocolate ganache and covered in chocolate. Heaven.

        For these bars I used Strp’d tigernut flour [AD]. What’s great about this flour is that it’s gluten free, nut free and full of fiber! 

        This flour tends to soak a lot of the moisture from any batter, which is perfect for fudgy bakes. And perfect for these raw vegan cookie dough bars as it added a really nice fudgy smooth texture to them which contrasts the crunchy set chocolate exterior.

        These refrigerated cookie dough bars can also be frozen to make small chocolate cookie dough ice cream square treats. I have tried them both refrigerated and frozen and I think I may prefer it as a frozen cookie dough bar! I would highly recommend giving it a go.

        How to make chocolate chip cookie dough bars

        Start by creaming together the sugars and butter's for a couple of minutes until creamy. Then add the gluten free flour, xanthan gum and chopped vegan chocolate, until combined. Then add the water and mix for a further 2 mins.½ tablespoon Water

        Press the dough into the loaf tin and freeze while you make the chocolate top.

        Vegan Chocolate Ganache Layer

        Melt together the vegan chocolate and plant based cream and pour over cookie dough layer. Set in the freezer for ½ hr then melt the vegan chocolate in a bowl.

        Slice the cookie dough bar into squares and place on a cooling rack over a tray lined with grease proof paper. The pour the melted chocolate over the bars - making sure there completely covered.

        Set in the fridge for a further 10 mins. Drizzle with the excess melted chocolate and enjoy!

        How to use tiger nut flour ?

        This is a very versilate flour and found it works really well in brownies and cookies. And can also be incorporated into cakes too. However, due to its ability to absorb alot of moisture I found it is best to reduce the amount of tiger nut flour in your cakes than originally and also incorporate plain gluten free or normal flour

        Is frozen cookie dough safe to eat ?

        Yes, this cookie is fine to eat frozen. And doesn't require baking as these bars are made from tiger nut flour.

        How long can frozen cookie dough sit out

        These vegan cookie dough bars, when frozen, can sit out at room temperature for 4hrs before they begin to lose their shape and need to be refrigerated and frozen again.

        Cookie Dough Bars

        Smooth, decadent, chocolatey goodness!

        Equipment

        • loaf tin
        • mixing bowl

        Ingredients

        • 50 g Vegan Butter
        • 30 g Almond Butter
        • 50 g Caster Sugar
        • 50 g Soft Brown Sugar
        • ½ tablespoon Water
        • 100 g Tigernut Flour
        • 1 teaspoon Xanthan Gum
        • 50 g Vegan chocolate

        Chocolate Ganache

        • 60 g Vegan chocolate
        • 45 g Plant Based Cream

        Chocolate Top

        • 200 g Vegan Chocolate
        Metric - US Customary

        Instructions

        • Start by creaming together the sugars and butter's for a couple of minutes until creamy.
          50 g Vegan Butter, 30 g Almond Butter, 50 g Caster Sugar, 50 g Soft Brown Sugar
        • Then add the gluten free flour, xanthan gum and chopped vegan chocolate, until combined.
          100 g Tigernut Flour, 1 teaspoon Xanthan Gum, 50 g Vegan chocolate
        • Then add the water and mix for a further 2 mins.
          ½ tablespoon Water
        • Press the dough into the loaf tin and freeze while you make the chocolate top.

        Chocolate Ganache

        • Melt together the vegan chocolate and plant based cream and pour over cookie dough layer.
          60 g Vegan chocolate, 45 g Plant Based Cream
        • Set in the freezer for ½ hr than melt the vegan chocolate in a bowl.
          200 g Vegan Chocolate
        • Slice the cookie dough bar into squares and place on a cooling rack over a tray lined with grease proof paper. The pour the melted chocolate over the bars - making sure there completely covered.
        • Set in the fridge for a further 10 mins. Drizzle with the excess melted chocolate and enjoy!
