So how do you make this … galette dessert
To summarize this galette is made in 5 simple steps. First is the pastry - mix all the ingredients in a bowl and roll it out into a disk shape. Next spread the jam onto the pastry and top with berries. Then simply fold the pastry over. Finally brush with egg or milk, to make it golden then all that's left to do is slice and enjoy with a scoop of ice-cream!

Ingredients for a galette :
Pastry for jam tart - jam tart ingredients
- Vegan butter - You can use either vegan block butter or margarine for the pastry.
- Plant-based milk - This can be oat, soya or almond milk
- Sugar - Caster or refined granulated sugar works best here.
- Plain flour - If you're not following a gluten free diet you may use normal plain flour instead
The Filling - jam filled pastry
Jam - For this galette I used St Dalfour's Summer fruit galette which is made primarily of berries and is perfectly sweet. But you can also use any other mixed berry jam.
Berries - These can be fresh or frozen. If however, you are using frozen berries make sure to coat it lightly in a tablespoon of cornflour- as frozen berries have a higher water concentration and therefore, the berry juice tends to leak out of the pastry. So the cornflour works to try and trap the water and reduce the leakage.
Glaze - Lightly brush on some plant based milk on top of the pastry, this will allow the pastry to brown in the oven and have a beautiful gold color.
Vanilla ice cream - this is optional but its a great addition to the galette. Of course if you're making your galette vegan use vegan ice-cream!

Expert Baking Tips - vegan galette recipe
- Roll the pastry between a sheet of greaseproof paper and a sheet of cling film to prevent the pastry from sticking to the counter top and so you can easily transfer the pastry to a baking tray.
- Fold the pastry over most of the berries to prevent leakage.
- Allow the pastry to cool completely once baked so the filling can set before slicing.

How to make jam pastries
Fruit galette recipe..
- Start by preheating your oven to 180° and line your baking tray with grease proof paper.
- Next mix together the flour, and sugar until combined. Then add the butter and rub it into the flour until it reaches a bread crumb consistency.
- Add in your water a little at a time until it comes together into a dough.
- Roll the dough into a large circle onto a floured surface or between two sheets of clingfilm/plastic wrap to prevent the dough sticking to the surface.
- Next spread the jam in the centre of the dough in a circle, placing the fruit on top.
- Fold the pastry corners into the centre of the Galette, leaving the middle bare.
- Finally brush the pastry with egg/milk so it can brown in the oven. Bake for 30-40mins.
- Allow the galette to cool slightly before serving with a scoop/ or two of ice cream. Enjoy!

Flavour variations
Blackberry gallette
This would be sensational. Simply substitute the jam for blackberry compote or even a blueberry lemon galette using blueberry jam - check out my foolproof recipe here and top with fresh berries, and follow the same method as you would for this mixed berry galette.
Galette Peach
Like a peach cobbler just substitute the apple for peaches! The peaches would be perfectly soft and lightly sweetened making it the perfect dessert to enjoy on a cold night.
