        I’m going to share with you the best pancakes recipe for one. These American style blueberry pancakes that are naturally vegan. And incredibly soft, fluffy and bursting with fresh juicy blueberries and Sweetened with maple Syrup. Delicious.

        In this recipe I’ll be shriting with you how to make pancakes fluffy baring in mind that this is a recipe for pancakes without eggs.

        This is by far the best recipe for american pancakes, it's so simple and makes the fluffiest, pancakes made with banana, making it completely eggless, nut-free and dairy free!

        A really great thing about this recipe on how to make pancakes is how customisable you can make it to suit any flavour profile. For example, you can easily make this into a recipe for plain pancakes without the berries. Or make chocolate chip pancakes or summer berry pancakes!

        Although this is the easiest recipe for pancakes , here are just a few expert tips i'd recommend:

        • Mix your dry ingredients before adding in the wet to ensure it’s fully combined.
        • Make a well/dip in the dry ingredients before pouring in the wet ingredients and mix gently in the centre until fully combined. This will prevent any large lumps and pockets of flour from forming.
        • Grease your pan with oil or dairy-free spread before pouring it on the batter to prevent it from sticking.

        Here's everything I used to make this pancakes recipe no eggs

        Vegan butter - You can use either vegan block butter, margarine or oil. This will be used to grease the pan to prevent the pancakes from sticking and help with flipping the pancakes.

        Plant-based milk - I used oat milk, but any other plant-based milk like almond or soy will work the same.

        Banana - This is the egg replacer that adds sweetness and helps bind the ingredients together along with the plant-based milk.

        Flour and Baking Powder - If you were wondering what makes this a fluffy blueberry pancakes recipe . It is because this is a pancakes recipe with self raising flour. And the addition of baking powder with the SR Flour is what allows these pancakes to raise when cooked and create that fluffy interior.

        Blueberries - You can’t make these dairy free blueberry pancakes without them!

        Maple Syrup - If you were wondering what goes with blueberry pancakes - the answer is always, maple syrup and that goes for all types of pancakes. As these pancakes don’t include any sugar in the batter it really needs something sweet to lift them up. As maple syrup has its health benefits, it would be my recommendation to make these into a healthy blueberry pancakes for one.

        How to make pancakes homemade - Step-by-step instructions 

        Begin by simply mixing together all your dry ingredients in a bowl. Once combined, create a dip/well to pour the wet ingredients into. As this will help prevent lumps from forming in your batter.

        Once the wet ingredients have fully combined into your dry ingredients fold in your blueberries.

        Prepare your pan by greasing it with oil or plant-based butter, then pour a ladle full of batter into your pan.

        How to make pancakes thicker - To make your pancakes THICK add more batter to your pan until it reaches your desired height. Cook on low heat for around 3-5 mins.

        Recipe for thin pancakes - If you would prefer to make your pancakes thin, simply add less batter to the pan so it is just coating the bottom. This will take considerably less time to cook so keep an eye on them.

        How to cook a pancakes:

        Your pancakes are ready to flip when the batter on top is no longer runny with only small patches of raw batter. You may also see the sides of the pancake begin to brown.

        Cook for a further minute on the other side then transfer to a plate and repeat the process until all the batter has been cooked.

        Finally serve with some more blueberries and your desired amount of maple syrup.

        Flavor Variations and Mixins

        There's so many different flavors you can create to make your own recipes for sweet pancakes. Here are some examples:

        Chocolate chip

        Simply fold in some chocolate chips in place of the blueberries into your batter for a more sweetened pancake. 

        Follow the same steps to cook these.

        Summer berry pancakes

        Again, simply fold in some berries of choice in place of the blueberries into your batter; these can be frozen or fresh.

        Can you make blueberry pancakes without baking powder ?

        Yes, although they might not be as fluffy if you did make it with it. But using self-raising flour will give you the best results if you're not using baking powder as it already has some incorporated into its flour.

        Can pancakes be reheated ?

        Yes! There’s no harm in microwaving your pancakes, although they may not be as fluffy as when you're cooked them straight away.

        What to serve with blueberry pancakes ?

        Maple syrup goes perfectly with pancakes, but if you don't have any, golden syrup or honey will work well too!

        Can you make blueberry pancakes no milk ?

        You need some type of milk to make pancakes, but you don’t need to use cow’s milk. I used plant-based milk to make this blueberry pancakes almond milk recipe.

        Is this a gluten free pancakes recipe ?

        To make these pancakes gluten-free simply substitute the regular flour for gluten-free self-raising flour with a teaspoon of xanthan gum!

        Are blueberry pancakes healthy ?

        These are! This blueberry pancake dairy free recipe doesn’t require any added sugar and is naturally sweetened with a banana!

        Pancakes plain or self raising ?

        Self-raising flour will help your pancakes rise to create more fluffy pancakes, but adding ½ teaspoon more baking powder to your plain flour and your pancakes will rise the same!

        You can freeze your pancakes for up to 7 days, in a sealed container once they have fully cooled down.

        • 1 teaspoon Baking Powder
        • 150 g Plant based milk
        • 1 Banana
        • 4 teaspoon Vegan butter
        • 50 g Maple syrup
        • 120 g Blueberries

          100 g Plain flour, 1 teaspoon Baking Powder
        • Once the wet ingredients have fully combined into your dry ingredients fold in your blueberries.
          150 g Plant based milk, 1 Banana

          4 teaspoon Vegan butter
