Although this healthy snickers with dates recipe is super easy, here are just a few expert tips I'd recommend:
- If you have tough/hard dates, soaking them overnight or for at least 4hrs in water will make it easier to blend.
- If you want to make these healthy snickers protein bars to be completely refined sugar free then use sugar-free, 70% dark chocolate to coat the bars.
- If you would like this easy vegan snickers slice bars to be completely nut free, you can use tigernut flour in place of the almond flour.

Healthy Snickers Protein Bars - Ingredients

Here's everything I used to make this raw food snickers bar recipe :
- Maple Syrup - Adds natural sweetness.
- Almond butter - Adds creamy and nuttyness to the base, also helps to bind the base together. This can also be substituted for peanut butter just, make sure it’s natural peanut butter without any additions just peanuts - same thing applies to the almond butter.
- Almond flour - If you wanted to make this nut free tigernut flour or gluten free plain flour would work well here.
- Dates - This will add sweetness and bind all the ingredients together and help create a sweet caramel filling.
Non-Vegan alternative.
If you don't want to make these vegan snickers gluten free and vegan simply substitute the plant based chocolate for normal milk/dark chocolate.

Instead of a date caramel you can make my easy normal caramel - you can follow my simple recipe here.
To make a slightly different bar - like a chocolate snickers. You can fill your bars with ganache! Which is a simple combination of equal parts chocolate to cream to create a super glossy and creamy filling!
How to make healthy snickers bar - Step by step instructions
- Begin by blending together all the base ingredients in a food processor until it comes together in a dough.
- Flatten the dough onto your loaf tin lined with greaseproof paper. Once level, set it aside as you make the date caramel.

Date Caramel
- For the date caramel simply blend all the ingredients into the food processor again. Blend until the dates have been completely blended and you have a smooth thick paste.
- Spread the date caramel over the base. Then evenly sprinkle some peanuts across the entire top.
- Then set the bars in the freezer for 1-2 hrs or until the caramel is firm.

Chocolate top
- Heat the chocolate and vegan butter in the microwave for 30sec intervals until melted.
- Once the caramel is firm remove it from the freezer, pull it out from the tin and slice into evenly sized bars.
- To reduce the mess and waste of chocolate. Grab a baking tray and line it with greaseproof paper. Place a cooling rack on top - [we will be pouring the chocolate onto the bars over the cooling rack and the grease proof paper underneath will catch the mess and excess chocolate.]
- Pour the chocolate over the top of the bars and allow it to drip down the sides. You may use more chocolate to completely cover the bars, but I've chosen to semi coat it.
- Allow the chocolate to set slightly before removing it from the rack and placing it onto a flat plate to further chill in the fridge to completely set.
- Once set, enjoy with your favorite drink or wrap in parchment paper and take it out with you for an on the go snack.

Base
- 130 g Tigernut/Almond flour
- 50 g Almond butter
- 2 tablespoon Maple syrup
- 60 ml Water
Date Caramel
- 200 g Pitted Dates
- 80 ml Water
- ½ tablespoon Maple syrup
- 3 tablespoon Peanuts
Top
- 200 g Vegan/dairy free dark chocolate
- ½ tablespoon Vegan butter (optional)
Instructions
- Begin by blending together all the base ingredients in a food processor until it comes together in a dough.130 g Tigernut/Almond flour, 50 g Almond butter, 2 tablespoon Maple syrup, 60 ml Water

- Once set, enjoy with your favourite drink or wrap in parchment paper and take it out with you for an on the go snack.
