This Delicious Healthy Strawberry Banana Bread is fantastic. You can have it as a breakfast, snack or dessert. And its free from fat, sugar and gluten and yet it tastes incredible! It's the ultimate treat for all to enjoy.

The simple recipe for this healthy strawberry banana bread
After trialing out many healthy banana bread recipes, and indulging in several taste testers. I am 100% certain that this is delicious. It's an all in one bowl recipe and is quick and easy to follow, so anyone can make it.
1. The Bananas
Firstly to make the sponge you want to mash up the ripe bananas - remember the more ripe they are, the sweeter the sponge will be (in my opinion that's better, but its completely up to you).
The easiest way I found to mash the bananas is to use an electric whisk. I use the Russel Hobbs hand mixer and it works amazing! It also helps create a nice smooth puree of bananas, instead of having chucks of banana in your bread.
Alternatively, you could mash it up with a fork or stand mixer using a paddel attachment.
2. Creaming Step
Just like any other cake recipe, you want to cream together the butter and sugar. And in this scenario honey will be our sugar and our bananas are the butter!
A great substitute for butter that not many people are aware of are, bananas. Using mashed bananas are perfect for baking as they provide extra nutrients and decreases the calorie and fat content. And yet it still produces that moist texture, as well as a rich and tasty flavour.
However, I must admit, it's not exactly like butter. You will still be able to taste a slight hint of banana. If that's not your forte, or perhaps you're allergic to bananas, you can check out my post on butter substitutes in baking. So you'll be able to choose from more nourishing alternatives.
3. Incorporating It All
Finally, you want add the eggs one at a time and gently whisk in the sifted gluten free flour, strawberries, chocolate chunks, baking powder and Xanthun gum.
When baking anything Gluten free I always recommend using Xanthun gum (its a common food additive that acts as a stabiliser or thickener) and is growing in popularity in gluten free foods. As it can improve the texture, consistency, flavour, shelf life and appearance of many foods.

4. Baking
Finally, pour the batter into a greased and lined loaf tin (I use this one) and it fits the batter perfectly! I realise you can make banana bread in basically any shaped tin, but a loaf tin seemed ideal for a ‘bread’!

Healthy Strawberry Banana Bread One Bowl Recipe (NO DAIRY!)
Equipment
- loaf tin
- mixing bowl
- spatula
- electric whisk
Ingredients
- 3 Bananas ripe
- 3 tablespoon Honey
- 2 Eggs medium
- 120 g Gluten Free SR Flour (SR-Self Raisng)
- 1 teaspoon Baking Powder
- 1 teaspoon Xanthun Gum (Gluten free)
- 70 g Strawberries fresh/frozen
- 70 g Dark Chocolate (DAIRY FREE)
Instructions
- Preheat the oven to 200 degree Celsius. Grease the loaf tin with butter and line with parchment/grease proof paper.
- Mash the ripe bananas into a mixing bowl.3 Bananas
- Add the honey and eggs to bananas and whisk until all incorporated.3 tablespoon Honey, 2 Eggs
- Chop the dark chocolate on a choping board into chuncks, then, slice the strawberries into small pieces - these will be incorparted into the batter.Slice a few strawberries downwards so you can place decoratvely ontop of the batter, before baking. Leave aside for now.70 g Dark Chocolate, 70 g Strawberries
- Sift in the gluten free flour, baking powder and xanthun gum. Before, whisking add the ¾ of the chocolate chips and strawberries, then whisk until all incorporated.120 g Gluten Free SR Flour, 1 teaspoon Xanthun Gum, 1 teaspoon Baking Powder
- Transfer the mixture into the prepared loaf tin, scraping the bowl down with a spatula to ensure all the batter is placed into the tin.
- Top with the remaining chocolate chips and strawberries, for a more decorative look.
- Bake in the oven for 30-40 minutes or until a skewer comes out clean.
- Allow the cake to cool. Then slice and enjoy with a cup of tea or anything you fancy x
Notes
- If you'd prefer to make this banana bread not gluten free, you can simply swap the gluten free flour for normal self raising flour. You also don't need to add Xanthun gum.
- If you are allergic to honey or prefer to swap it for sugar, you can do. Just add 40g of caster sugar/coconut sugar in place of the honey.
