These salted caramel chocolate shortbread bars come together in minutes and keep for weeks, meaning you can whip up a big batch and snack on these for weeks. Of course you’ll eat them all within two days because they’re seriously addicting, but sometimes you just have to lie to yourself a little, y’know?

The caramel chocolate shortbread recipe
Here I will break down how to make vegan shortbread bars in 5 simple steps.
Begin by creaming together the vegan butter and sugar. And once fully combined add the gluten free flour and xanthan gum.

Mix until all the flour has been fully coated in the butter and begins to clump together.
Then transfer to your prepared tin and evenly flatten the dough into the tin. And bake for 25-30mins. [it should be slightly risen, golden brown around the edges and dry to the touch].

As soon as the cookies are baked, slice them into bars. Then set aside to cool while you melt the vegan chocolate and prepare the vegan caramel.
Finally drizzle these gluten free shortbread bars with melted vegan chocolate and vegan caramel - using my foolproof caramel recipe (you're going to want this one!)

Tips for the dough:
1st tip - never overwork a shortbread dough - if you over mix or worse, knead the dough. You’ll end up with a tough biscuit that's not buttery and crumbly at all. The key to the perfect shortbread dough is to mix it just enough that all the flour is incorporated into the butter into slightly big clumps.
2nd tip - The dough doesn't have to fully come together as a ball while you're mixing it, because it'll come together when you flatten it in your baking tray and as it bakes the butter will melt, binding everything together. Don’t worry.
3rd tip - When baking shortbread, it can be quite easy to either overbake or underbake. These gluten free shortbread bars should take about 25 to 30 minutes to bake and you’ll know they’re done when they have risen slightly, golden brown on the edges, and are dry to the touch.

Vegan Shortbread Bars
Equipment
- Bowl
- Square baking tin
Ingredients
- 100 g Vegan butter
- 200 g Gluten free flour
- 1 teaspoon Xanthun gum
- 70 g Granulated sugar
Drizzle
- 40 g Vegan chocolate
- 40 g Vegan Caramel (Refer to notes)
Instructions
- Preheat the oven to 180°c and line a 9 x 13 inch pan with grease proof paper/parchment and set aside.
- Begin by creaming together the butter and sugar. And once fully combined add the gluten free flour and xanthan gum.100 g Vegan butter, 70 g Granulated sugar
- Mix until all the flour has been fully coated in the butter and begins to clump together.1 teaspoon Xanthun gum, 200 g Gluten free flour
- Transfer to your prepared tin and evenly flatten the dough into the tin. Then bake for 25-30mins. [it should be slightly risen, golden brown around the edges and dry to the touch]
- As soon as the cookies are baked, slice them into bars. Then set aside to cool while you melt the vegan chocolate and prepare the vegan caramel. [Refer to notes]40 g Vegan chocolate, 40 g Vegan Caramel
- Once completely cooled drizzle the shortbread bars with vegan caramel and chocolate. Leave to set in the fridge or just ending in it as it is 🙂
